This Watermelon Slushie gives vacation poolside vibes, though it’s a Whole30 compatible slushie that delivers that same refreshment on a hot day. It’s hydrating, bursting with summer flavor and ready in just a few minutes with a handful of ingredients.

Ingredients You Need

  • 4 cups watermelon, cubed – Fresh, juicy watermelon works best. You can use pre-cut watermelon from the produce section to save time.
  • 2 cups ice – This is essential for the perfect slushie texture.
  • ¼ cup fresh-squeezed lime juice – From about 2 large limes, this adds a bit of brightness. You can substitute lemon juice, if you prefer.
  • 2 tablespoons fresh mint – Added to balance the flavor and refreshment.

If your watermelon isn’t super sweet, you can add 1 tablespoon of sugar, honey or agave syrup at a time, until it’s the right sweetness level for your taste. To keep it Whole30 friendly, add a couple pinches of sea salt to bring out the natural sweetness of the watermelon.

How to Make Watermelon Slushies

This simple slushie recipe is ready in three simple steps, making it a great refreshment for summer pool days, backyard parties or just an afternoon pick-me-up. Here’s how to do it:

  • Add the watermelon, ice, lime juice and mint to a blender.
  • Secure the lid and blend on high until smooth and slushie-like.
  • Pour into glasses and serve immediately. Garnish with a lime wedge or a sprig of fresh mint (optional).

Make-ahead tip: You can make this recipe up to an hour in advance. Place the blended mixture, still in the blender jar, in the freezer. When ready to serve, pulse it 3 to 5 times before serving to restore its consistency.

Instructions 

  • Add all of the ingredients to a blender, secure lid and blend on high until well combined.

Notes

This slushie is made to be served immediately, but you can make it an hour or so in advance and place in the freezer. I recommend leaving it in the blender jar. When ready to serve, place the blender back on the base and pulse 3 to 5 times to ensure even consistency.
