Drive-In Cherry Limeade Syrup

Nugget ice is one of the keys to my happiness, and it has been since I grew up with regular trips to Sonic Drive-In for their famous Cherry Limeade. My nugget ice maker just arrived, and that was the final thing I needed to make my own Cherry Limeade at home. I have had one in my shopping cart for months, but I was influenced this week to buy a much more affordable version from Wayfair.

Nugget ice is one of the keys to my happiness, and it has been since I grew up with regular trips to Sonic Drive-In for their famous Cherry Limeade. Nugget ice, or pellet ice, is a soft, crunchy ice. It’s the signature to this drink for me.

I finally got my own countertop nugget ice maker, which was the last thing needed to make Cherry Limeade at home.

Rather than the sugar-filled Cherry Limeade from America’s Drive-In, I started by making my own Fresh Cherry Limeade Syrup. It’s the height of cherry season here in Washington, and I wanted to make a more health-conscious, paleo version.

My friends know about my obsession with Sonic’s soft, nugget ice. I even hosted a Sonic-themed housewarming party under my carport. It was complete with Cherry Limeade Cocktails (just add a splash of vodka to the Cherry Limeade below for a boozy version), chili dogs and tots galore!

How to Make a Drive-In Cherry Limeade

Fill a pint glass with ice. Pour in desired amount of Cherry Limeade Syrup (about 2 to 3 ounces is good). Top with soda water and stir to combine. Garnish with fresh lime slices and a whole cherry to serve.

This syrup recipe yields enough to make 10 to 12 pint-sized cherry limeades, depending on how much sweetness you like.

Cherry Limeade Syrup

Ingredients 

  • 2 cups red cherries, pitted
  • 1 cup water
  • ½ cup raw honey
  • Zest of 1 lime
  • 1 cup lime juice, fresh-squeezed (about 8 small limes)

Instructions 

  • Add pitted cherries and water to a medium saucepan over medium-high heat. Bring to a boil, then reduce to a simmer.
  • Add in honey and zest of 1 lime. Stir to combine and return to a simmer for 10 minutes, stirring occasionally. Use the back of a wooden spoon to mash the cherries as the continue to soften.
  • In the pitcher of a high-power blender, add the cherry mixture and 1 cup lime juice. Secure lid and run on high for about 1 minute, until fully blended.
  • Transfer Cherry Limeade Syrup to a jar and let sit until it reaches room temperature. Secure the lid and store in the refrigerator for up to a week.
