Sometimes a simple pasta dish is calling my name. I dressed this linguine with my quick recipe for Avocado Pesto. 🥑 It’s an easy way to dress up a weeknight meal when you don’t have a lot of extra time.

Avocado Pesto
3 small (or 2 large) avocados, seeded and peeled
1 large handful basil
1/2 cup pine nuts
1 lemon, juiced
1/2 cup olive oil
Salt and pepper to taste
Add all ingredients, except salt and pepper, to a food processor. Pulse until well combined, scraping down sides, as needed. Season with salt and pepper to taste. Add more olive oil, if needed. Mix into cooked pasta of your choice and serve, or use as a dip for whatever you want!
