Pimento Cheese Dip
This easy Pimento Cheese Dip is made by blending cream cheese, mayonnaise, shredded cheddar, pimentos, and a dash of spicy hot sauce. A great appetizer or snack, it also makes for the ultimate pimento cheese grilled cheese sandwich.

- 4 ounces cream cheese softened
- 8 ounces shredded cheddar cheese
- ¼ cup mayonnaise
- 1 4-ounce jar pimentos drained
- ¼ teaspoon kosher salt
- 2 pinches black pepper
- ⅛ teaspoon garlic powder
- 1 dash hot sauce
In a medium bowl, combine the softened cream cheese, shredded cheddar cheese, mayonnaise, pimentos, kosher salt, black pepper, garlic powder, and a dash of hot sauce.
Stir until everything is well incorporated and creamy.
Cover and refrigerate for at least 1 hour, or up to overnight, to let the flavors meld together.
Serve chilled with crackers or cut vegetables.
To make pimento cheese spread: Add cream cheese and mayonnaise to a food processor and pulse about 10 times until smooth. Add the remaining ingredients and pulse until combined and your desired texture is reached, stopping to scrape down the sides as needed.
To make pimento cheese grilled cheese: Spread a generous layer of pimento cheese between two slices of sturdy bread, like sourdough. Lightly spread mayonnaise on the outside of each slice, then cook in a skillet over medium heat until the bread is golden brown and crisp and the filling is warm and melty, about 3 to 4 minutes per side.
