Mustard Shallot Vinaigrette
This mustard shallot vinaigrette is a fridge-staple dressing made with Dijon, lemon juice, and minced shallot. It's shaken together in a jar in minutes. Drizzle it over green salads, pasta salads, or grain bowls all week long.

- 3 tablespoons lemon juice (about 1 lemon)
- 2 tablespoons red wine vinegar
- 2 tablespoons Dijon mustard
- 2 tablespoons shallot minced
- ¾ teaspoon kosher salt
- ¼ teaspoon black pepper
- ¼ teaspoon garlic powder
- ½ cup olive oil
Add ingredients in the order listed above to a small jar. Secure the lid and shake for about 30 to 45 seconds to mix well.
Taste and adjust seasoning, as needed. If the vinaigrette seems to thin, add a bit more mustard to thicken it up. If the vinaigrette seems to thick, add a bit more olive oil.
Store leftover dressing in the air-tight jar in the refrigerator for up to 5 days.
