Funeral Potatoes (Cheesy Potato Casserole)

Funeral Potatoes are a comforting cheesy hash brown casserole topped with crushed potato chips and baked until golden and bubbly. This is a crowd favorite at post-funeral gatherings and cheerful holiday events, alike.

Ingredients

  • 32 ounces frozen cubed hashbrowns thawed
  • 2 cups sour cream
  • 10.5 ounces cream of mushroom soup
  • tablespoons dried minced onion
  • 2 cups Colby jack cheese shredded
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • cups wavy potato chips crushed

Instructions

  • Preheat oven to 350 degrees F.
  • Add all ingredients, except potato chips, into a large bowl. Stir to combine.
  • Transfer mixture to a 9-inch by 13-inch baking dish.
  • Add potato chips to a zip-top bag and use your hands or a rolling pin to gently crush. Spread potato chips onto an even layer on top of the potato mixture.
  • Bake for 50 to 55 minutes, or until golden and bubbly.
  • Serve.
