Funeral Potatoes (Cheesy Potato Casserole)
Funeral Potatoes are a comforting cheesy hash brown casserole topped with crushed potato chips and baked until golden and bubbly. This is a crowd favorite at post-funeral gatherings and cheerful holiday events, alike.

- 32 ounces frozen cubed hashbrowns thawed
- 2 cups sour cream
- 10.5 ounces cream of mushroom soup
- 1½ tablespoons dried minced onion
- 2 cups Colby jack cheese shredded
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- 1½ cups wavy potato chips crushed
Preheat oven to 350 degrees F.
Add all ingredients, except potato chips, into a large bowl. Stir to combine.
Transfer mixture to a 9-inch by 13-inch baking dish.
Add potato chips to a zip-top bag and use your hands or a rolling pin to gently crush. Spread potato chips onto an even layer on top of the potato mixture.
Bake for 50 to 55 minutes, or until golden and bubbly.
Serve.
