Ingredients

  • 3 tablespoons all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon unsweetened cocoa powder
  • ¼ teaspoon baking powder
  • Pinch kosher salt
  • 3 tablespoons milk
  • 1 tablespoon vegetable oil
  • teaspoon vanilla extract
  • 2 tablespoons chocolate chips

Instructions

  • Spray the inside of a small microwave-safe coffee mug with baking spray.
  • Add flour, sugar, cocoa powder, baking powder, and salt into the mug. Stir together, until combined.
  • Pour in milk, vegetable oil, and vanilla extract. Stir until batter is well combined, scraping the bottom of the mug. Fold in chocolate chips.
  • Microwave on high for 70 seconds, until cake is set. Avoid overbaking to keep the cake moist.
  • Let rest for 1 minute and dig in!

Notes

  • Make this a dairy-free dessert by swapping milk for a milk alternative and using vegan chocolate chips.
  • Mix and match the stir-ins. Use butterscotch chips, seasonal baking chips, or crushed Cadbury Mini Eggs for a seasonal twist.
  • Test the doneness by pushing your finger into the top of the mug cake. It should bounce back like a sponge when done. Microwave wattage varies, so be sure to test it after 60 to 70 seconds.
