We all might have had to cancel or postpone our summer travel plans – I was set to get away next week – but we’ll always have memories of our past vacations. That’s what inspired me to create this two-minute take on a mimosa.
I was fortunate to make it to Paris a couple of years ago with some of my best friends, and you can bet we took in every chance possible to order an Aperol Spritz. That classic drink is made with prosecco, Aperol and soda water. This version has a more brunchy vibe and reminds me of all the lovely sidewalk cafes we visited in Paris.
Serve this Aperol Sparkler with some store-bought croissants or make my simple Zucchini Quiche, sit on your back porch or balcony and close your eyes as you sip and transport yourself to those lovely Parisian cafes.
Ingredients
- 2 ounces fresh-squeezed orange juice
- 1 ounce Aperol
- 3 ounces prosecco
- Ice
- Orange slice for garnish
Instructions
Fill a cocktail glass with ice.
Add fresh-squeezed orange juice over the ice. Pour in Aperol, and top with prosecco.
Gently stir with a spoon or cocktail straw. Garnish with an orange slice and serve.
