Everyone loves pizza, and I love it even more when non-traditional toppings create a new flavor profile for one of my favorite meals. That brought me to the creation of this Sweet Potato & Sage Pizza, which was a great meal to create as I began preparations for Thanksgiving dinner.

Sweet Potato & Sage Pizza
1 pre-made pizza dough
1/2 sweet potato
1/4 large onion
12-15 sage leaves
3 tablespoons olive oil
1 1/2 cups fresh shredded mozzarella
Salt and pepper
Flour to dust counter

Preheat oven to 450 degrees F. Rest pizza dough on flour-dusted counter for 30 minutes.

White dough is resting, thinly slice onion and sweet potato (I used a mandolin) and shred cheese.

In a skillet over high heat, add a tablespoon of olive oil and sauté onion and sweet potato for about 6-8 minutes. Remove from heat.

When dough is rested, stretch it to a 12- to 14-inch circle and place on a pizza pan. Brush olive oil onto the dough, keeping the outer 1/2-inch dry. Sprinkle with salt and pepper. Add 1 cup shredded cheese to the pizza. Spread cooked onion and sweet potato onto cheese and top with additional 1/2 cup cheese.

Place sage leaves onto pizza and place in oven to cook for 13-15 minutes or until crust is crispy. Enjoy!
