It’s soup weather, and there really isn’t anything easier than a Vegetable Soup. You can add the veggies you like best, and you don’t need to spend much money to make it delicious. In fact, I already had all of these ingredients on hand.

Vegetable Soup
3 carrots, peeled and sliced into rounds
3 celery stalks, diced
1 small onion, diced
2 cloves garlic, sliced
3 cups diced cabbage (about half a small cabbage)
5 cups water
5-6 medium tomatoes
1 can kidney beans, drained and rinsed
2 tablespoons olive oil
1 tablespoon salt
1 teaspoon pepper
1 tablespoon dried parsley
1 lemon

Heat 2 tablespoons olive oil in a large pot over medium-high heat. Add onion, celery and carrot and sauté for 5-7 minutes. Add garlic and cook another minute.

Add cabbage and 5 cups water, bringing soup to a boil. Core and chop tomatoes. Reduce heat to medium and add tomatoes, salt, pepper and dried parsley. Squeeze in lemon juice and kidney beans. Return to a boil and cook for 15 minutes. Adjust seasoning and serve.
